Fried, stewed, grilled, baked or broiled are some popular methods for cooking chicken and we just happened to stumble on a good one this week. An article produced by the Wall Street Journal outlined that chicken is the fastest meat for consumption from birth to full maturity and that poultry production is rising faster than any other meat that humans normally consume. White Chicken Chili
4 chicken breast halves
4 cups chicken stock
2 small cloves of garlic minced
1 small onion diced
1/4 cup jalapeños
2 cans of white kidney beans drained
2 tsp dried oregano
1 tsp ground cumin
1 tsp chili powder
2 tsp kosher salt (we preferred the flavor of a smoked salt)
1 tsp black pepper
In a stockpot or Dutch oven, cook chicken in the chicken broth over medium heat for about 20 minutes. Use a fork and shred the chicken when fully cooked. Add all other ingredients and cook for another 10 minutes. Top with cheese or hot sauce and enjoy! We enjoyed it with siracha hot sauce and cheddar cheese. This recipe is low in fat and heart healthy.
